Ivón grew up in Rigby, Idaho in a traditional Mexican family household. At the age of 15, her mother was diagnosed with type 2 diabetes. Through her mother’s experience, Ivón became aware of the limited diabetes education available to patients. As Ivón learned about nutrition through elective courses in high school, she knew at that time she wanted to be a dietitian to help her mom and other people with diabetes. She wanted to help others learn how to implement healthy habits into their lives.
Fast forward to college, Ivón began her education at Utah State University on a full-ride scholarship. During her college years, Ivón learned more of the impact diabetes has on the body which motivated her to specialize in diabetes education. She also discovered the complications one can face with diabetes and how prevalent it is among Latinos. Being Latina, Ivón realized the need in the Latino community to have a dietitian who understood their cultural food practices.
In 2018, Ivón began her dietetic internship at Rocky Mountain Diabetes Center. Throughout her experience, her passion for diabetes education became stronger and clearer. Ivón completed other parts of her internship in California, Arizona, and Idaho. Her favorite rotation was the one she completed at Rocky Mountain Diabetes Center. Ivón is ecstatic to begin her dietetics career in a center where patients come first, and she can see the impact diabetes education has in her community.
Ivón is the third out of four children. Her favorite thing to do is to spend time with family.
She also enjoys strength training, dancing, and being a resource for her friends and family.
Ivón hopes to build a bridge between her patients and diabetes education.
