Italian Bean and Ham Soup

Ingredients
- 1 bag (16 ounces) frozen Italian vegetables
- 1 can (15 ounces) low salt garbanzo beans, drained
- 1 can (15.25 ounces) low salt kidney beans, drained
- 1 can (14.5 ounces) low salt diced tomatoes, with liquid
- 6 ounces Canadian bacon, diced
- 2 cans (11.5 ounces each) low sodium chicken broth
- 1 cup water
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
Instructions
- Combine all ingredients in a 4- to 6-quart stock pot.
- Slightly mash tomatoes.
- Stir to combine.
- Bring soup to boiling.
- Reduce heat and simmer 7–9 minutes.
