Beatriz Diaz graduated from Idaho State University in 2013 with a Bachelor of Science in Dietetics. Since that time, Beatriz has been actively involved with her nutritional expertise serving patients in both the hospital and private practice setting.
Initially working at State Hospital North in Orofino, Idaho, Beatriz was an integral part of the food service and meal planning process insuring adherence to strict dietary regulations. She used her skills as an educator and writer to create educational material for the hospital’s patients.
Using her bilingual skills, Beatriz works with both English and Spanish speakers at Rocky Mountain Diabetes Center in diabetes education and dietary care. Beatriz works with clinical and research patients to teach self-management skills to those with diabetes related health concerns. Beatriz teaches a variety of classes including insulin resistance and the use of continuous glucose monitoring equipment.
Beatriz loves helping people and as a diabetes educator, she enjoys assisting those who suffer from diabetes learn how to manage their disease. She cherishes the “a-ha” moments when patients learn a significant bit of information that will help them in their lives.
Beatriz was raised in Driggs, Idaho and is now married with two children, a son and a daughter.
She and her husband, Luis, enjoy the outdoors and spend as much time as possible with their children camping and swimming in the summer and snowmobiling and snowboarding in the winter.
Beatriz loves to exercise and travel when she has the opportunity.
