Preheat oven to 375°. Microwave each corn tortilla on a double thickness of paper towels for about 30 seconds to soften. Lightly brush oil on one side of each tortilla and place oil side down on a cookie sheet. Place a stick of string cheese on one edge of each tortilla and roll tightly. Set the rolled up tortillas seam side down on the cookie sheet. Bake for about 15 minutes or until the tortillas are crisp. Yield: 4 servings.
