Chicken Pot Pie with Yogurt-Biscuit Topping
Ingredients
- ½ C fat-free chicken gravy
- 1 C mixed vegetables, frozen
- 3 oz. boneless/skinless chicken breast, cubed/cooked
- ½ t thyme
- Pepper to taste
- ½ C low-fat Bisquick
- ¼ C fat-free plain yogurt
- 3 T fat-free milk
- 1 t diet margarine
Instructions
Heat gravy in a small saucepan. Add chicken, frozen vegetables, thyme, and pepper; heat thoroughly. Pour into a small casserole or baking dish (soufflé dishes also work great.) Mix Bisquick, yogurt, milk, and margarine in a small bowl until well blended. Spoon Bisquick mixture unto the top of the chicken mixture and bake at 375o for 15 minutes or until slightly brown on top. Yield: 1 serving
