Crunchy Vegetable Burrito Banditos
Ingredients
- ½ C Shredded carrots
- ½ C chopped broccoli
- ½ C chopped cauliflower
- 2 green onions, thinly sliced
- 4 oz. shredded low-fat cheddar cheese
- ¼ C non-fat ranch salad dressing
- ½ t chili powder
- 4 7” flour tortillas
- 1 C shredded iceberg lettuce
Instructions
In a mixing bowl combine carrots, broccoli, cauliflower, and onions. Add cheese dressing, and chili powder, mix until combined. Spoon about ½ C of the vegetable mixture into the center of each tortilla, top with lettuce, roll and enjoy. Yield: 7 servings.
