Coat a small non-stick skillet with cooking spray; add oil. Place over medium-high heat until hot. Add rice; sauté 4-5 minutes or until rice is golden. Add beef broth and salt; bring to boil. Cover, reduce heat, and simmer 20 minutes. Remove from heat; stir in green onions, parsley, and soy sauce. Cover and let stand 5 minutes. Serve immediately. Yield: 2 servings.
