Ingredients
- 1 ¼ cups seeded, chopped tomato
- 1 C low-sodium vegetable juice cocktail
- ¼ C chopped cucumber
- ¼ C chopped celery
- ¼ C chopped green pepper
- ¼ C sliced green onion
- 1 T lemon juice
- 1 T commercial oil-free Italian dressing
- 1/8 t salt
- 1/8 t garlic powder
- 1/8 t pepper
- 1/8 t hot sauce
- Fresh chive blossoms (optional)
Instructions
Combine first 12 ingredients in a medium bowl. Cover and chill at least 6 hours. To serve, ladle soup into individual bowls, and garnish with chive blossoms, if desired. Yield 2 servings.
