Spread the tortillas out. Divide the cream cheese evenly among the tortillas, cover as much of the tortillas as possible. Lay the ham slices on top of the cheese. Sprinkle with scallions and mesclun. Roll the tortillas up tightly to create a log shape. Wrap in plastic wrap and refrigerate for up to 12 hours. Just before serving cut the wrap in half crosswise on a slight diagonal. Yield: 4 servings.
