Light Beef Stroganoff



Boil and drain potatoes, set aside. Cut beef into bite-sized pieces. Brown in frying pan and remove when done. Add garlic, mushrooms, and onion to the pan. Fry until softened. Add beef broth and simmer until reduced by about half.  Add potato, parsley, beef, and salt/pepper. Bring to a boil. Reduce heat and simmer for 5-7 minutes. Remove from heat and add sour cream. Serve over ½ cup of noodles for each person. Yield: 2 servings.
