Light Beef Stroganoff



Boil and drain potatoes, set aside. Cut beef into bite-sized pieces. Brown in frying pan, remove when done. Add garlic, mushrooms, and onion to the pan. Fry until softened. Add beef broth and simmer until reduced by about ½. Add potato, parsley, beef, and salt/pepper. Bring to a boil. Reduce heat and simmer for 5-7 minutes. Remove from heat and add sour cream. Serve over ½ cup of noodles for each person. Yield: 2 servings.
