Ingredients
- 8 oz spaghetti, broken into 2” pieces
- 1 tbsp soft margarine
- ½ C Parmesan cheese
- 1 beaten egg
- 1 ½ lb lean ground beef
- 1 medium onion, chopped
- 1 green pepper, chopped
- 2 cloves garlic, minced
- 1 qt jar spaghetti sauce (meatless)
- 1 tsp sugar
- ½ tsp oregano
- 1 lb low-fat cottage cheese
- 8 oz mozzarella cheese
Instructions
Cook spaghetti per package instructions. Drain, and add margarine, Parmesan cheese, and egg to spaghetti. Spread in a 9x13 baking pan. Spread cottage cheese over spaghetti mix. Sauté ground beet, onion, green pepper, and garlic until brown. Then drain the fat, and add spaghetti sauce, sugar, and oregano. Top the spaghetti and cottage cheese, filling with meat mixture. Bake at 350° for 30 minutes. Top with mozzarella cheese and bake for another 10 minutes. Yield: 8-10 servings.
