Sugar Free Cranberry Cheesecake



Completely dissolve gelatin in boiling water. Pour into blender. Add cottage cheese and cream cheese. Blend at medium speed, scraping sides as needed, until well-blended and smooth. Pour into a large bowl and gently stir in Cool Whip. Pour mixture into crust and place in refrigerator to chill (about 4 hours.) Top with additional Cool Whip if desired.
